Erika, just a quick question. I have gotten to a place where I cannot tolerate meat, except some seafood. I am trying the vegetarian route, but, I cannot eat tomatoes or mushrooms – which seem to be in almost every dish. Any suggestions for substitutes on these two items. I really enjoy your insight and appreciate all that you share. Thanks.
Honestly, no. If it’s just a taste issue, I’d recommend you just give it a shot anyway. Mushrooms might be able to be overlooked, but not the tomatoes.
