Spicy Barbecue Sauce

by Erika Nicole Kendall

Specifically for use with the slow-cooked BBQ chicken recipe!

This is my BBQ blend… before it’s blended in!

1-2 tbsp olive oil

1 medium-sized onion, finely chopped

3 cloves garlic, minced

1 14oz can of diced tomatoes

1 cup apple cider vinegar

1/4 cup worcestershire sauce

1/3 cup brown sugar

1/4 cup molasses

2 tbsp mustard

1 tbsp horseradish

1/4 cup lemon juice

1/2tsp chipotle pepper (paprika will do if you don’t have any)

1 tbsp chili powder

Whisk together all the dry ingredients, then add your wet ingredients one by one. Ta-da!

It looked like glitter before it’s mixed. Lol

This looks yummy.

I’m wondering if there’s a brown sugar substitute for us lowcarbers.

(Agave and … ?? I like my stuff kinda spicy, so I’m always looking for things to sweeten properly ’cause otherwise folks won’t eat my cooking, LOL.)

A low-carb sweetener that could adequately replace the brown sugar? LOW CARB? or Low GI? I don’t think stevia would work – not in the slightest – so I’d sooner tell you to use a dry rub on whatever it is you’re cooking, and offer up the sauce – cooked as written – on the side to use at your own discretion.
