2 large onions, cut into 1/4in slices
1 can warm beer (preferably a lighter version – beers with bolder flavors leave a more “malty” taste to them… )
1 cup warm water
a pinch of each of the following spices, shaken together in a small bowl: salt, paprika, black pepper, nutmeg, mustard, allspice, garlic powder, ginger, sage, thyme, cinnamon and white pepper. Heavy on the paprika.
Line the bottom of the pot with half of the onion slices. Wash your chicken, pat it dry and season it with your spice blend. Sit your chicken in the crock pot on top of the onions. Using your beer and water combo, fill your slow cooker until the liquid is almost as tall as the chicken in the pot. Cook crock pot style on low for 8-12hrs, or on medium heat for 2 hours. Once finished, pull apart your meat, and toss with sauce. Ta-da!
Note: Don’t wanna use beer? That’s okay – 1/4 cup worcestershire sauce, 1 1/2 cups apple cider vinegar and the rest with water should do you juuuuust fine!
