1 medium onion, chopped
1 garlic clve, diced
1lb ground turkey
4tbsp chili powder
1tsp ground cumin
1/4tsp ground pepper
1/4tsp salt (optional!)
1 & 2/3 cups chicken broth
4 cups black beans
2 cups kidney beans
2 14.5oz containers of diced tomatoes
1 16oz bag of frozen corn
Put the onion, garlic and turkey in a large stock pot. Head over medium-high heat, stirring often, until the turkey is cooked through. Add the spices and cook, stirring, about five minutes. Add the chicken broth and stir well to get the browned bits up from the pan. Add the beans, tomatoes and corn. Cook for 10-15 minutes. Serve with tortilla chips, cheddar cheese and or sour cream. For the vegetarian version, you can substitute turkey with tofu and use liquid from the soaked beans instead of chicken broth (or use your own veggie broth!)
