The Hungry Woman’s Quiche

1 unbaked pie shell

3 small potatoes

1/4 cup cubed cooked ham

2 cups shredded cheese

5 large eggs

1 cup milk

Preheat the oven to 325 degrees F. Prick the bottom of the pie shell with a fork in several places and prebake for 15 minutes; remove from the oven, then icrease the oven temperature to 375. Layer the potatoes, ham, and then cheese into the shell. In a medium bowl, beat the eggs and milk together, and pour the mixture into the shell. Bake for 30 minutes at 375. Reduce heat to 350 and bake for an additional 10 minutes.

I had to cook this at least another 20-30 minutes.. and even then the potatoes taste a bit under done. I think next time I’ll microwave the potatoes for 5 minutes before I slice them up.

Its in the oven now and looks perfect ! I took a queue from the previous poster and cooked the potatoes on the stove top first then proceeded as the recipe states.

Oh man, I so wish I would have read these comments before I made the quiche! It was super tasty, however as Nibuca mentioned, it needed MUCH more time to bake than anticipated. Although it was totally worth it in the end…yum! 🙂

I like a homemade quiche with asparagus & chicken instead of the ham & potatoes. What I need is a smaller pie pan to cook a quiche for one!

Once again I’m lost, I thought this clean eating doesn’t involve milk, ham or pie shells? Somebody please help me lol
