Smoked Chicken with Roasted-Red Pepper Sauce

2  turkey bacon slices
4  (4-ounce) skinned, boned chicken breast halves
1/4  teaspoon  salt
1/4  teaspoon  black pepper
1/2  cup  chopped red onion
1/2  teaspoon  ground coriander
3  garlic cloves, minced
1  chipotle chile in adobo sauce, diced
1  cup  salsa
1  cup roasted red bell peppers, drained and sliced
Chopped fresh cilantro (optional)

Cook turkey bacon in a large nonstick skillet over medium-high heat until crisp. Remove bacon from skillet; crumble and set aside. Sprinkle chicken with salt and black pepper. Add chicken to bacon drippings in pan; sauté 2 minutes on each side. Remove chicken from pan. Add onion, coriander, garlic, and chile to pan; sauté 3 minutes. Stir in salsa and bell peppers. Return chicken to pan. Cover and cook over medium heat 12 minutes or until chicken is done. Sprinkle with crumbled bacon; garnish with cilantro, if desired.

This recipe was great! I think it may become one of my new staples. I changed a couple of things though, I made a mistake and forgot I was using my salsa for the recipe so I brought hot salsa which made it a little too spicy so I added a small can of spanish style tomato sauce, I then had to add a little bit more of the adobo sauce, some additional garlic powder and then which is bad since it was still too spicy for my finicky pregnant sister who just happens to be visiting I had to add about a tablespoon of sugar. Oh yeah I also added about 2 extra cutlets and used an additional chipotle chili since I love the taste. It was great without the extra tomato sauce and sugar but it was spicy b/c of the salsa so I had to make it edible for her, next time I won’t make the salsa mistake and i’ll be able to be more true to the recipe. In any case it was great! On the plus side b/c of the tomato sauce I had a lot of extra sauce to spoon over rice for my hubby and sis yum!

i absolutely LOVE this recipe!!! I made it about a 2 months ago and then I made it this past weekend for some friends! They loved it!! It will definitely be a staple! So simple and good! BTW, I use the chicken breasts tenders versus whole breasts!
