Mustard and Herb Dressed Beef Tenderloin

1  (2 1/2-pound) beef tenderloin, trimmed
Cooking spray
1  teaspoon  salt
1  teaspoon  freshly ground black pepper
1/3  cup  finely chopped fresh parsley
2  tablespoons  chopped fresh thyme
1 1/2  tablespoons  finely chopped fresh rosemary
3  tablespoons  Dijon mustard

Pre-heat oven to 350 degrees. Lightly coat beef with cooking spray; sprinkle evenly with salt and pepper. Place beef on pan coated with cooking spray. Bake until beef turns brown on all sides. Take it out and let it sit for about 15 mins.
Sprinkle seasonings in an even layer on a large sheet of plastic wrap. Brush your mustard evenly over your beef. Roll your beef over your plastic wrap, allowing it to collect the herbs and allowing the herbs to stick to the beef. Slide your beef back into the oven for 5 mins, then take it out. You’re done! Slice away.

Hey, this sounds great, I’m going to try it this week. I do have a question though:about how long should the beef cook in the oven? I know the recipe says until its brown on all sides, but roughly how long is that?

Approximately 25 minutes, but you have to be sure to watch it.

I’m going to saute a whole mess of pepper, onion & garlic to go along with the tenderloin
