Mediterranean Flatbread Sandwiches

1 c. diced english cucumber
1 c. chopped seeded tomato
1/2 c. crumbled feta cheese
2 tablespoons fresh lemon juice
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 8oz package 7 grain pilaf
1 7 oz container hummus
3 Mediterranean style white flatbreads

Combine first 8 ingredients in a bowl. Spread hummus evenly over each flatbread. Spoon pilaf mixture evenly over half of ea. flatbread and fold flatbread over filling. Cut each sandwich in half and serve immediately

This looks delicious! I was wondering how many servings this is supposed to make. Though I’d love to eat all three sandwiches, I’m sure this would be counterproductive. Is it one sandwich per adult, or one half a sandwich per adult?

I’d say one sandwich per is sensible.
