Chipotle Chicken Marinade

by Erika Nicole Kendall

This recipe was found on Simply Scratch, an amazing food recipe website. Definitely check her out!

3 tablespoons Olive Oil
2 cloves of garlic smashed, peeled and roughly chopped
1 tablespoon Honey
1/4 teaspoon cumin
2-4 Chipotle Chiles in Adobo, roughly chopped {seeds and all}
A heavy pinch of Kosher Salt and Black Pepper

Optional Ingredients:
Chopped fresh Cilantro
Fresh Squeezed Lime Juice

In a mini food processor add olive oil, honey, salt, pepper, cumin, garlic and chopped chipotles. Let the food processor run until the marinade is thick but not chunky. Pour over chicken and marinade for two hours {remove 30 minutes prior to grilling}. Heat your grill to medium/ medium high heat and grill until the internal temperature reaches 170 degrees. Let rest for 30 minutes before slicing. Enjoy!

Tried this recipe tonight on boneless, skinless chicken breast and veggies on the side. Such great flavor! It was so good that I prepared more chicken for the rest of the week to eat on pita and corn tortillas! This will surely be a “go-to” recipe in my arsenal from now on. Can’t wait to try more recipes here.
