1 tbsp granulated sugar
1/2 teaspoon table salt
2 large eggs
2/3 cup half and half
1 tsp vanilla extract
2 tbsp unsalted butter
4 large apples, cored and thinly sliced
2 tbsp dark brown sugar
1/3 tsp ground cinnamon
1 tsp lemon juice
Pre-heat oven to 500 degrees.
Mix together your flour, granulated sugar and salt in one bowl. In a separate bowl, mix together your eggs, half-and-half and vanilla extract. Combine both and blend until all the lumps are gone.
In a 10″ skillet, melt the butter and add the apples, brown sugar and cinnamon. Stir the apples and try to ensure that each apple slice is covered in a little cinnamon. Cook until the apples are a nice light buttery color, and then spread the apples out over the bottom of the skillet, trying to do your best to hide the bottom of the skillet and covering it completely with apples.
Pour your batter over the top of the apples, and place the skillet directly into the oven. Bake at 425 degrees, and until the edges of the pancake are brown and have risen above the edges of the skillet. This takes about 20 minutes.
Slice the pancake up like a pie, and serve with a little apple butter orrr a little pure maple syrup. Bon appetit!
