Honey Mustard Rice

1 cup uncooked basmati rice

1 cup julienned (matchstick) carrots

1 cup string beans

2 chicken breasts

1/3 cup honey mustard

1 tsp coriander

1/2 tsp olive oil

Get your rice cooking, and toss your olive oil and chicken in the skillet. Immediately chop your chicken up into long fat chunks. Put your green beans in the skillet with your chicken, and put your coriander over the top. Once the green beans are tender, put your carrots in, and pour your honey mustard over the top.

Once the rice is finished, put a couple of scoops in the bowl, with your veggies on top. You can be corny and try to be creative (like me), or you can toss your ric ein the pot and mix it all together. It’s all going to the same place, right? Ha!

The sweet that comes out in the cooked carrots blends with the honey mustard, for a nice taste. You can also drop the chicken for a nice vegan treat!

    Looks good. One question, is the honey mustard bottled or is it something you made?

      Bottled, though you can certainly make your own and use that. :)

    I made this last night for dinner and it was delicious. I also made my own Honey Mustard dressing (thought I had some in the fridge but didn’t)
