Chicken Croquettes

A GREAT way to use leftover chicken, or ANY leftover meat! ...

4 cups shreaded chicken
1cup shreaded cheddar cheese
2 eggs
1/4 chopped onion
1tbsp breadcrumbs
1/2 tsp garlic
1/2 tsp coriander
1/2 tsp oregano
pinch of crushed red pepper

Shread left over chicken breast, add 1 cup shreaded cheddar cheese, onion, breadcrumbs. Seasoning. Form into patties to your liking. Pour 1tbsp of extra virgin olive oil into your pan, and cook your croquettes! (Note: You can also bake these, if you like!)

    I baked these with the leftover shredded chicken from the chicken tamale casserole. IDK what I did wrong but I didnt like them that much.
