Apple Pancake Pie

My own pancake pie recipe! ...
by Erika Nicole Kendall

1/2 cup unbleached all-purpose flour

1 tbsp granulated sugar

1/2 teaspoon table salt

2 large eggs

2/3 cup half and half

1 tsp vanilla extract

2 tbsp unsalted butter

4 large apples, cored and thinly sliced

2 tbsp dark brown sugar

1/3 tsp ground cinnamon

1 tsp lemon juice

Pre-heat oven to 500 degrees.

Mix together your flour, granulated sugar and salt in one bowl. In a separate bowl, mix together your eggs, half-and-half and vanilla extract. Combine both and blend until all the lumps are gone.

In a 10″ skillet, melt the butter and add the apples, brown sugar and cinnamon. Stir the apples and try to ensure that each apple slice is covered in a little cinnamon. Cook until the apples are a nice light buttery color, and then spread the apples out over the bottom of the skillet, trying to do your best to hide the bottom of the skillet and covering it completely with apples.

Pour your batter over the top of the apples, and place the skillet directly into the oven. Bake at 425 degrees, and until the edges of the pancake are brown and have risen above the edges of the skillet. This takes about 20 minutes.

Slice the pancake up like a pie, and serve with a little apple butter orrr a little pure maple syrup. Bon appetit!

Ok, Erika I have been reading about counting calories but I don’t see where you included the calories for your recipes. Please let me know if I’m missing it. Thanks

I don’t post calorie counts for the recipes. In order to post calorie counts, it’d require programming work that costs upwards of $25,000.

If you are a calorie counter, plugging in the ingredients to a website like sparkpeople.com will give you the information you desire. :)

This turned out really good. I had to use whole wheat flour because it was all I had. But it worked! The family loved it.

  • If you are promoting a product, or posting a sales pitch, your comment will be deleted.
  • If you are trying to dispute something on the site, you will need more than anecdotal evidence (i.e., "My cousin's friend's uncle's girlfriend's boss did it and it worked!" If you've got books or at least Internet links, then we can talk. Otherwise, you risk your comment not being approved.
  • Foul language is discouraged. I'd like people to still be able to read the site at their jobs.
  • Disrespecting me or the men and women who post here is also unacceptable. Your comment won't be approved, and you might be banned. (Actually, I've grown to like embarrassing people who behave like they have no home training. Consider yourself warned. :)
  • Everyone is welcome here. You don't have to be Black, you don't have to be a Girl. I'd prefer you to be human, and I'd prefer you to be kind. We're helping each other, right? :)
  • Last, but certainly not least, commenting here is a privilege. Not a matter of "freedom of speech," but a matter of "approved at the discretion of the the owner." It's how I keep the community civil. Everyone appreciates that civility until it's their comment on the chopping block. We simply don't have time for foolishness, here. (And please, don't e-mail me to complain. I already know you're mad.)
